Desserts For Diabetics

HERMAN: Don't let diabetes creep up on you

Two of my uncles had diabetes. Both used wheelchairs; each lost a leg to the disease. Uncle Ike was a contemporary of my parents; he is a hazy page in my book of memories. I don't remember him except as one who rarely spoke, who sat quietly in his chair in the shadows of the family's interaction.

Uncle Mel was different. He was two years older than I, my husband's uncle and childhood playmate, and after my marriage, my friend and support. He always had a smile and a joke. He also had an appetite for two and a body to match. In the early years, we thought it funny when he would comment, "Eat! I am always ready, and there is nothing edible that disagrees with me." Diabetes was in his genes, and "innocently" he did everything possible to encourage the disease.

My uncles are gone, but the memory of their disease-caused disabilities lingers in my head as I count the obese people I see daily. If an adult decides "Big is beautiful," making it clear that we should not suggest otherwise, we must respect his or her choice. Others have health problems they are handling with doctors. But when we observe youngsters who can't run and climb because they are obese, that is cause for general concern.

As parents, we worry about these children too little fat, while some of us struggle with our own overweight. If the doctor says something like "pre-diabetic" chemistry, diabetes is suddenly in the home.

Our bodies are supposed to break down sugars and starches we eat, converting them into glucose to provide energy to our cells. When glucose can not be transferred to our cells and remains in the blood, diabetes occurs. Insulin is the missing link. The natural insulin to be produced in the pancreas is inadequate to the transfer. This explains why diabetics are on a daily regimen of testing, and why many need to give themselves insulin shots. Each situation must be carefully guided, explained and monitored by our own doctors and the team responsible for handling the disease.

For diabetics, she adds, portion size is paramount: "It's not so much what you each, but how much you eat. Your body doesn't know if you're eating potatoes or rice or a brownie once it breaks it down and converts it into sugar.
